Lavender Simple Syrup DIY + Iced Lavender Latte Recipe


If you've never tried it before, lavender as a flavor might sound a little bit weird. It makes sense in herbal tea, but - cocktails or coffee? It is delicious! Trust me! However, finding the flavor syrup isn't the most easy thing, but making your own -- that is easy! Here's how I made the lavender simple syrup, as well as an iced latte concoction.

Lavender Simple Syrup

  • Mix together one cup of water, two cups of sugar, and four tablespoons of lavender all in one small saucepan. I used dried lavender, but fresh buds also work (probably even better). 
  • Bring everything to a boil and once it starts bubbling, lower the heat to medium-low to simmer for a few minutes. Stir it up, so all the sugar is dissolved. 
  • After this, remove totally from heat and let sit uncovered for about half an hour for the syrup to thicken. 
  • Next, strain the lavender out and store the syrup in a glass jar or bottle. I read that it can last up to four weeks in the fridge, but we will see how much I actually have left after that.

Iced Lavender Latte

  • To make this specific drink, I first used my Aeropress to brew some dark roast coffee using four scoops of Caribou's Obsidian. I pressed these shots directly over ice. 
  • I put four tablespoons of the lavender simple syrup into the glass. 
  • I filled the glass to the top using vanilla-flavored almond milk.
  • Stir and enjoy!
